Why would you? The S1 brakes are excellent when in order.

At the front you have an issue with the swivels. You need the S2 swivels. I am not sure about the upper suspension ball joints nor track rod ends. If you need the S2 track rod ends you also have to change the Pitman arms on steering box and idler box. And change the central track rod.

At the rear you have an issue with the hand brake The S1 has the pinchers operating on the disc. The S2 has a combined system at the rear. Disc for the foot brake. Drum for the hand brake. To be able to mount the drum brake you need an S2 rear axle and disc. I am not sure about the hub.

You need to put in the brake force limiter from the S2. You already have the axle. Just weld the hardware to mount it to the bottom of the car.

Often over looked is the different ratio between volumes of the chambers of the master brake cilinder. Because of the Super Duplex lay out the amounts of brake fluid each chamber has to pump is different. You need a S2 master brake cilinder. It has a diameter of 22 mm. So you also need a servo.

Don't under estimate the difference in brake fluid volume! Sometimes Fulvisti mount a non original master brake cilinder on their S2. Commercial people sell these too easily. I am not sure that the volumes of the chambers are suitable for Super Duplex. Lancia was rather unique with the Super Duplex system.
